There's only one save slot, so in order to start a new game you have to delete your save file yourself. If you reload your save file after beating Mooncrash, you are taken back to that point and can't go back into the sim. The moment you complete the 27th objective, you are taken to a final cutscene outside of the sim, at which point your autosave is overwritten. These include things like unlocking each character, using every escape route, using 50 neuromods, and escaping with every crew member in the same simulation.
